Pumpkin is back!!!! I was composing an ode to the lack of canned pumpkin in my personal and professional life (It is great for adding fiber to cat, dog, and rabbit diets.) but when I went to the store today it was back!!!!! It is ok for it to be fall now since food can be pumpkin flavored again.
I’m in the mood to cook today. I’m ashamed to admit why. Yesterday I had some downtime so I went to a site that I frequent when I want to get uppity and disagree with things. But they had a post there with lots of baking and sewing ideas. I do a lot of baking and sewing. I found myself agreeing with most of what they said. So sad for me. But it made me feel like cooking today.
Yogurt Coffee Cake
1 cup brown sugar
1/2 cup butter
1 egg (or substitute)
1 teaspoon vanilla
2 cups flour
1 teaspoon baking soda
1/2 teaspoon baking powder
1/4 teaspoon salt
1 cup yogurt any flavor
Cream together brown sugar and butter. Add egg and vanilla.
Mix together dry ingredients and add to butter mixture, alternating with adding in the yogurt.
Bake at 350 F for 45-55 minutes in a greased, floured 9 inch pan. Sprinkle with powdered sugar.
This was great. Expensive, since I my hand mixer died during step one and I had to go replace it to carry on, but worth it. I used lemon yogurt so the taste isn’t overpowering. I imagine that orange would be good too. I can’t figure out how some of the wilder flavors would play out in this – Trix flavor anyone?

I’ve read on several message boards about the great pumpkin shortage of 09 but I didn’t notice it. I remember seeing canned pumpkin in the stores last year, even pumpkin beer. I begged DSO for some pumpkin beer, but he wouldn’t get it because I might not like it. He promised me some this year and I have been stalking the grocery watching for it.
Sounds like a yummy recipe…but what is up with canned pumpkin being a seasonal item? I try to keep it on hand for Daisy Dog, but it’s hard to know how much to buy in November for the next year.
