I’m making a recipe based on something Bobby Flay did on TV today. Yes, Bobby Flay, king of grilling meat made something that inspired me enough to have me jump up and make it.
Baked White Beans with Tomato Jam
3 cans of white beans, drained
1/2 onion chopped
15 oz diced tomatoes, undrained
2 tablespoons honey
1 teaspoon ground cloves
8 oz frozen spinach, thawed
Saute the onion in either broth or oil. Add the tomatoes and cook for 2 minutes. Mix in the honey and cloves and let simmer while you prepare the beans. Rinse and drain the beans. Put them in a 2 qt casserole dish. Puree the tomato mixture in a food processor. Add salt and pepper to taste. Pour the tomato mixture over the beans and stir. Top with thawed spinach. Cook in a 325 degree oven for 1 hour.
He did recommend some feta on top but the feta I dug out of my fridge was not fit for human consumption.
It sounds good, but don’t you think it needs some sort of dairy?
